My sister called me this morning for a Peanut Butter Cookie Dough Bites recipe from my "Oh She Glows" cookbook. Oh right! I had forgotten to dig this book out after our recent house move. I spent a few minutes perusing the book looking for my favourite type of recipe - one where I have all of the ingredients in my house! Isn't that a great feeling? Knowing you can make that beautiful food in that beautiful photograph right now and not have to go to the grocery store first for some fancy-schmancy ingredient? And I found one...yes!
Salt & Vinegar Roasted Chickpeas. I followed the recipe from Angela Liddon's "Oh She Glows" pretty closely. I had some chickpeas in my fridge leftover from a curry night and I used fleur de sel because I had a brain fart; a little bitter but still yummy!
They have a crunchy outside and a soft inside. If you like them with more crunch, leave them in longer. Note: these lose their crunch by the next day BUT you can re-heat them in the oven to bring back the crunch.
